Description

What kind of wine it is

Bianca di Castello di Cigognola is a fresh and straightforward white wine, a distinctive expression of the Pavia region. Made from Barbera and Nebbiolo grapes, it stands out for the unique choice of white vinification of these black grape varieties. This production approach gives the glass a delightfully fruity profile and a lively structure. The white vinification enhances drinkability and offers a dynamic sip sustained by an excellent taste persistence.

Where it comes from

This wine is born among the hills of Oltrepò Pavese, in an area overlooking the evocative Scuropasso valley. The Castello di Cigognola, a historical landmark of the territory since the mid-1300s, has seen generations of important families succeed one another. Since 1981, the estate has been managed by the Moratti family, who care for the vineyards with great dedication. The identity of this land clearly emerges in a white wine with a marked territorial imprint, tense and balanced.

How it is produced

Production is based on careful grape harvesting, followed by a process that separates the must from the skins to achieve a clear and clean color profile. To accentuate the wine’s vivacity, an additional share of Barbera vinified in white is added to the base. This precise technical choice aims to increase the natural acidity, making the tasting particularly vibrant. The process seeks to preserve fruity aromas to ensure a smooth, focused overall balance.

Tasting notes

When poured, it appears a straw yellow color enlivened by elegant golden highlights, indicating excellent brightness. On the nose, clear fruity aromas reminiscent of apple and pear can be detected, accompanied by subtle hints of gooseberry that precisely define the bouquet. The palate reveals a fresh and lively character, supported by a well-integrated acidic backbone in a slender texture, capable of finishing with a pleasant and clean length of flavor.

Food pairings

Its immediate nature and zesty acidity make it a perfect companion for aperitif time. During meals, it pairs harmoniously with fish starters and dishes based on light vegetables, thus enhancing non-intrusive seasonings. It performs at its best when served alongside a good plate of tagliatelle with white ragù, as it balances the savoriness of the meat with its fruity notes. It also goes perfectly with braised white meats and can effortlessly cleanse the palate.

When to serve it

This inviting white is ideal for moments when you want an easy-drinking glass with character. Its vivacity makes it an excellent choice for starting an evening or accompanying a full meal with delicate tones. Thanks to its excellent persistence, it keeps the tasting interest alive glass after glass without ever feeling heavy. Enjoy it to appreciate a crisp sip, able to enhance the softness of dishes within an absolutely fragrant framework.
