What kind of wine is it

Pegasus Bay’s Pinot Noir is a red wine that represents an authentic and meticulous expression of the Waipara Valley. The winemaking process involves the partial use of whole clusters and an extended maceration, elements that encourage a gradual and balanced extraction. Aging takes place in oak barrels for fifteen months, resulting in a structured, precise, and remarkably complex profile. The style combines ripe red fruit with a measured spiciness, supported by a velvety tannic texture that hints at the story of its origin.

Where it comes from

The grapes are grown in the Waipara Valley, a wine region located close to the southern coast. This position benefits from natural shelter from cold currents and rainfall coming from the north, creating a favorable microclimate for steady and consistent ripening. The vines take root in poor, well-drained soils, which are essential to control the plant’s vigor. This specific environment ensures a limited yield and a pronounced aromatic concentration in the grapes, giving the wine a clearly defined identity.

How it’s made

The harvest is carefully planned in different stages to respect the precise ripeness of the grapes. In the cellar, a portion of the harvest is vinified without destemming, followed by several days of pre-fermentation maceration to slowly extract tannic elements from the skins. Fermentation continues with additional skin contact to reinforce the wine’s dense structure. Once this process is complete, the wine rests in oak barrels for fifteen months before proceeding to bottling.
