Description
Primitivo di Manduria Passo del Cardinale by Paolo Leo comes from vineyards located between the towns of Manduria and Sava, in the province of Taranto.
It is produced exclusively from Primitivo grapes, hand-picked and selected entirely at dawn. Fermentation takes place in stainless steel tanks at a controlled temperature of 25°C for 8-10 days. The wine is then aged for 3 months in American oak barriques and for 6 months in stainless steel before being bottled.
Passo del Cardinale by Paolo Leo shows an intense red color. The nose reveals elegant and intense spicy aromas. On the palate, it is full-bodied and balanced, with a pleasantly persistent finish.
Perfect for pairing with pasta dishes with meat ragout, it is ideal with red meats and game.
