Description

What kind of wine it is

Primitivo di Manduria Riserva Giunonico by Paolo Leo is a red wine made exclusively from Primitivo grapes, cultivated in Sava, in the province of Taranto. The winemaking process involves fermentation at a controlled temperature and maceration on the skins, followed by long maturation and further refinement. The result is a soft and full-bodied style, with intense fruit and a lingering finish, designed to accompany dishes with good structure.

Where it comes from

The vineyards of origin are located in Sava, in the territory of the province of Taranto, associated with Primitivo di Manduria. This origin defines the identity of Giunonico by Paolo Leo and helps one understand its character in terms of intensity and concentration. The reference to the territory remains central to understanding the wine’s profile and its fruity signature.

How it is produced

The Primitivo harvest is carried out by hand in the early hours of dawn. The must ferments for 8–10 days at 25°C with controlled temperature and remains in contact with the skins for 12–15 days to maximize color and structure extraction. After fermentation, the wine matures in wooden barrels for 20 months, then is refined for 4 months in steel and a further 3 months in bottle before release.

Tasting notes

In the glass it presents a dark garnet red color with purplish highlights and good visual intensity. On the nose, clear and intense aromas of blackberry and black cherry emerge, with a well-defined fruity profile. On the palate, it is soft and full-bodied, with broad development and a long aftertaste that prolongs the flavor sensation after swallowing.

Pairings

The fullness of this Primitivo di Manduria Riserva makes it suitable for red meats and game dishes. The aging in wood and the overall refinement support preparations with bold flavors and good succulence, while maintaining its recognizable fruity component. It pairs well with roasts and game recipes served with rich sauces.

When to serve it

This is a red wine to offer when you want a wine with structure, suitable for convivial moments featuring substantial dishes and slow cooking. It also suits more formal occasions thanks to its intense profile and lasting flavor. The long aging in wooden barrels and subsequent refinements encourage enjoying it slowly, highlighting its fullness and continuity on the palate.
