Description
This high-end Spanish red wine from VivaltuS comes from the Ribera del Duero, made from Tempranillo (Tinta Fina) grapes with a small percentage of Cabernet Sauvignon. The vineyards are located at altitudes ranging from 850 to 1000 meters and include plots in Fuentenebro, La Aguilera, Anguix, Curiel de Duero, Gumiel de Izán, and Moradillo de Roa. The vines, which can be up to a century old, are sustainably managed and are rooted in varied soils including red clays, calcareous sands, and granite deposits, offering grapes of great elegance, freshness, and structure.
The winemaking follows a meticulous and artisanal approach, with a triple selection of the grapes: in the vineyard during harvest, on the sorting table cluster by cluster, and finally berry by berry with optical selection. Each parcel is vinified separately using only the force of gravity, fermenting with indigenous yeasts and with minimal intervention. Aging occurs for 85% in French oak barrels for 11 months, while the remaining 5% of the wine matures in terracotta amphorae, contributing to preserve purity and expressiveness.
On the nose, it opens with complex notes of black fruits, balsamic hints, and spices, which evolve progressively in the glass. On the palate, it reveals a silky and refined texture, characterized by great balance, vibrant acidity, and freshness, with a long, harmonious, and deeply elegant finish. It is a wine that favors finesse over power, authentically expressing its terroir of origin.
Ideal with grilled or roasted red meats, Spanish cuisine specialties, and aged cheeses.
