Description
What kind of wine it is
Saint-Estèphe by Château Cos Labory is a red wine from the Médoc, made from a Bordeaux blend of Cabernet Sauvignon, Merlot, and Cabernet Franc. The winemaking follows traditional methods, with fermentation in steel at a controlled temperature and subsequent aging in French oak barrique for about 18–24 months. The result is a balanced and smooth style, with a fruity profile and a well-measured spicy presence.
Where it comes from
This wine originates in the Saint-Estèphe area, in the Médoc, on the left bank of the Gironde, a territory historically linked to great local classifications. The vineyards are located on gravelly soils with a limestone subsoil, a combination that promotes even ripening and a well-balanced taste. The name of the estate recalls its geographical position, beyond Cos d’Estournel, and its modern history is tied to the property’s passing in 1845 to François Labory.
How it is produced
Cabernet Sauvignon, Merlot, and Cabernet Franc are processed in a classic style, focusing on aromatic clarity and controlled extraction. Fermentation takes place in steel at controlled temperature to maintain the crisp fruit character and composed spiciness. Aging in French oak barrique for about 18–24 months allows structure and aromas to integrate, resulting in a coherent and consistent sip.
Tasting notes
In the glass, it appears ruby red. On the nose, there is a good balance between fruit and spice, with notes of black berries and well-measured spiciness. On the palate, the entry features earthy notes, spices, and dark fruits; the progression remains fresh and enjoyable, with a tidy structure and a fruity finish that invites another sip.
Food pairings
It naturally pairs with red meat main courses, where fruit and spice enhance the succulence without overpowering it. It is ideal with game, rich first courses, and mushroom-based dishes, where the earthy nuances find a direct echo. It works well when the dish offers intensity and structure.
When to serve it
It is suitable for lunches and dinners featuring meat, game, or dishes with mushrooms and flavorful sauces. Its drinkability, combined with freshness and a fruity finish, makes it pleasant even in convivial settings, maintaining a neat technical profile. Choose it when you want a balanced Saint-Estèphe, with well-measured fruit and spice, and a consistent sip.
