Description

What type of wine is it

Roycello by Tormaresca is a white wine produced in Salento exclusively from Fiano grapes, grown within the renowned Maìme estate. The winemaking process involves a brief maceration followed by temperature-controlled fermentation to preserve the delicate varietal aromas. This white stands out for its fresh and straightforward profile, characterized by a style that is at once smooth and savoury. The elegant, crisp finish harmonizes perfectly with the clear citrus and floral notes, resulting in a glass that is essential and technically precise.

Where does it come from

This white wine is born in Apulia, in the heart of Salento, within the historic properties of the Maìme estate. The territory of San Pietro Vernotico, in the province of Brindisi, boasts a strong winemaking tradition. The geographical origin fully enhances the grape's varietal identity, offering an authentic expression of the Brindisi landscape. The direct connection between the vineyards and the local microclimate brings out the key features that define the bottle's territorial character with clarity.

How it is made

The grape clusters are exclusively hand-selected during harvest to ensure maximum care of the raw material. After a brief maceration, the must ferments in stainless steel tanks at a strictly controlled temperature. The maturation stage involves aging on the lees for several months in the same vessels. This is followed by further rest in the bottle before release, through a process conducted entirely in steel, maintaining a defined and clean aromatic profile.

Tasting notes

Visually, the wine reveals a bright straw yellow color, indicative of meticulous cellar work. The nose opens with clear floral sensations reminiscent of acacia and honeysuckle, enriched by delicate notes of white-fleshed fruit and citrus. On the palate, the entry is pleasant and balanced, with notable savouriness complemented by a welcoming texture. The finish offers a pleasantly crisp closure, ensuring a clean and elegant persistence.

Food pairings

This white fully expresses its gastronomic potential when paired with seafood specialties. It is highly effective with dishes featuring crustaceans and shellfish, a combination that strikes the perfect balance between the wine’s smoothness and the savoury nature of the dishes. Its fresh bouquet makes it ideal for enhancing light and delicately seasoned ingredients, as it respects the subtle texture of the seafood. Beyond the table, it is also an excellent and refined choice as an aperitif.

When to serve it

This is the perfect label for an informal aperitif or to accompany a meal entirely devoted to the flavors of the sea. It is particularly suited for those seeking a balanced drinking experience, able to sustain vibrancy and tension from the start of the meal through the main courses. Thanks to its careful cellar aging, it arrives in the glass with a neat and perfectly composed aromatic profile. It is the ideal bottle for those who wish to enjoy a clear varietal expression, distinguished by great cleanliness and stylistic precision.
