Description
Es by Gianfranco Fino is a Primitivo that originates from the authentic treasure of Manduria, capturing the power, finesse, and allure of vineyards cultivated with bush vines on calcareous-clay red soils. The microclimate, characterized by the sea breeze from the Ionian and the warm Apulian sun, provides the grapes with optimal ripening, ensuring a wine of extraordinary concentration and complexity.
The harvest is done manually with careful selection of the bunches, followed by transport in refrigerated trucks to preserve their freshness. After destemming and gentle pressing, the must macerates with the skins for two to three weeks in stainless steel tanks, with temperature control and daily délestage. The pressing is done using a vertical hydraulic press, and the wine matures for about nine months in French oak barriques, before further aging in bottle for six months.
Visually, it presents a deep ruby red color. The bouquet is rich and enveloping, with notes of ripe fruits, spices, licorice, and cocoa, enhanced by elegant balsamic hints and hints of wood and vanilla. On the palate, it is full-bodied and complex, with extraordinary aromaticity and a long and elegant finish.
It pairs perfectly with significant first courses and red meat or game main dishes.
