Description
This Santenay produced by Labouré-Roi is a structured and persistent Pinot Noir, originating from the extreme south of the Côte de Beaune. This wine reflects the richness and variety of the communal terrain and its numerous hamlets, stretching up to Remigny.
The grapes are handpicked, selected twice, then destemmed and crushed prior to vinification in temperature-controlled vats for 20-25 days. After a cold maceration of 5-6 days, fermentation begins with Burgundy yeasts, accompanied by daily punch-downs and pumping over. The aging process takes place for 12 months in oak barrels, 30% of which are new.
The color is a bright ruby red. On the nose, there are notes of red cherries and plum, while on the palate, the attack is fresh, with fruity notes of berries and a hint of licorice. The tannins are firm yet well-balanced, the taste is full-bodied, and the finish is very long.
It pairs perfectly with marinated meats, light game, poultry, braised beef, lamb, and cheeses.
