Description

What kind of wine it is

Savigny-lès-Beaune Les Follettes by Le Puy de L’Ours is a red wine produced in Burgundy from Pinot Noir grapes. This wine comes from an organic vineyard and stands out for its fresh and elegant style, capable of delivering clear fruit and remarkable persistence on the palate. Its production involves delicate extraction and careful aging in wood, which gives it a balanced and technical profile. An authentic expression that precisely introduces the territory of Burgundy.

Where it comes from

This wine originates in the village of Savigny-Lès-Beaune, within the specific plot called Les Follettes. The vines are cultivated using environmentally-friendly agricultural practices and rooted in rocky soils with a clay-limestone nature. The high limestone content imparts pronounced vibrancy to the palate, while the presence of clay provides structure without weighing down the sip. These pedoclimatic conditions guarantee an aromatic precision true to the characteristics of local Pinot Noir.

How it is produced

Vinification begins with the retention of a portion of whole clusters in order to preserve the natural fermentative dynamics and the integrity of the fruit. During fermentation, gentle daily punch-downs are carried out, followed by delicate pressing to achieve gradual extraction. The use of a vertical press helps obtain the juice and best preserves the varietal characteristics. The wine matures for about twelve months in barriques, half of which are new and half used, following an approach aimed at highlighting the peculiarities of the soil.

Tasting notes

Visually, the wine shows a typical ruby red color resulting from gentle extraction. On the nose, it reveals a well-defined and orderly bouquet, focused on red fruits that emerge with notable aromatic intensity. On the palate, the sip is balanced, supported by vibrant freshness that accompanies flavor development and avoids any rigidity. The tasting concludes with a persistent, clean finish, consistent with the aromatic sensations and well integrated by the time spent in barrique.

Pairings

This wine pairs very well with white meat dishes, mild cheeses, and even fish preparations where delicacy is valued over intense spices. At the table, it excels with roast poultry or mushroom recipes that highlight the freshness and smoothness of Pinot Noir. It is particularly suited to traditional meat-based dishes, as it maintains the balance between vibrancy and savoriness without ever overpowering the food.

When to serve it

This label is ideal when looking for a precise red, characterized by a distinct drinkability, able to accompany an entire meal with poise. Its intrinsic freshness makes it perfect for intermediate seasons and in those dinners where balance and smoothness are preferred. The aging in wood provides tidy structural character that is fully appreciated in refined settings, making this wine a great companion for convivial occasions of understated elegance.
