Description
What kind of wine it is
Savigny-Lès-Beaune Les Godeaux by Maison Chanterêves is a red wine produced in Burgundy from Pinot Noir grapes. Classified as Savigny-Lès-Beaune, this wine is characterized by a fresh and elegant style, expressing a refined structure and delicate tannins. The winemaking follows a low-intervention approach, using indigenous yeasts and whole-cluster fermentation, without temperature control. Aging in used oak barrels preserves the integrity of the fruit and ensures a pure and authentic sip, free from filtration.
Where it comes from
The wine originates from the renowned Les Godeaux climat located in Savigny-Lès-Beaune, in the Burgundy region. The vineyards stretch across a gentle slope facing south, at an altitude of about 360 meters, a position that contributes to the wine's tense and precise profile. The soil consists of a stony surface layer lying over marlstone underneath, a synergy that gives the wine marked expressiveness and a clear mineral imprint. The vineyard management follows uncertified biodynamic practices, with the utmost respect for the environment and biodiversity.
How it is made
Maison Chanterêves adopts a winemaking approach based on minimum intervention, to enhance the raw material. Founded by Tomoko Kuriyama and Guillaume Bott, the winery conducts spontaneous fermentation with indigenous yeasts on whole grapes and allows the process to unfold naturally. The subsequent aging phase takes place exclusively in used barrels, a technical choice aimed at avoiding that the aromas of new wood mask the fruit's aromatic identity. The wine is finally bottled without any filtration, thus delivering a faithful snapshot of the terroir.
Tasting notes
In the glass, it shows a bright, transparent red color. The nose opens with a fresh combination of red and black fruits, well-defined and with remarkable aromatic purity. On the palate, the wine reveals depth and a refined structure, distinguished by an aerial quality closely linked to the whole-cluster technique. The sip is smooth and complex, accompanied by delicate tannins that perfectly balance drinkability with pleasant taste complexity.
Food pairings
The elegance of this Pinot Noir calls for pairing with meat dishes that have substantial yet balanced structure. It is an ideal match for braised beef, which harmonizes with the delicacy of the tannins, and for a grilled entrecôte. The freshness of the sip also enhances dishes like pork fillet with porcini mushrooms, where earthy notes recall the wine's minerality. It also pairs precisely with traditional recipes such as boeuf bourguignon, creating a deep and succulent flavor dialogue.
When to serve it
This label is particularly well-suited to a well-curated lunch, especially when the menu features meat dishes. Thanks to its balance and minimal winemaking intervention, the bottle is also appreciated in informal settings among enthusiasts, offering a genuine interpretation of Burgundy's terroir. Letting the wine breathe in the glass allows you to fully appreciate the fruit's aromatic definition and its refined structure, ensuring a complete and engaging tasting experience.
