Description
The Barbazzale Bianco comes from the Cottanera vineyards located about 700 meters above sea level, within the municipality of Castiglione di Sicilia, on alluvial lava soil.
It is produced from Catarratto grapes to which small percentages of Viognier are added. In the cellar, the processing phases involve a cold maceration, before fermentation at a controlled temperature of 16 ° C for 20 days. Refine in steel in contact with its yeasts for about 3 months.
At sight it has a straw yellow color with greenish reflections. It gives floral hints of wisteria and broom on a vegetable and iodized texture. On the palate it shows great freshness and a pleasant sapidity.
It goes very well with mixed fried fish and sandwiches. Try it with different types of sushi and sashimi.
