Description

The Soave Classico "Vigneti di Foscarino" directly expresses the main characteristics and peculiarities of the union between the Garganega and the volcanic territory of Soave. The old vines of 40 years of average age draw nourishment from a lava basalt soil, capable of giving the wine an enviable intensity and minerality.

The grapes are harvested only in the plots of the Foscarino cru and, transferred to the cellar, undergo destemming and crushing; the must remains in contact with the skins for a few hours, so as to be enriched with aromatic compounds and colour. The fermentation is divided into steel, large barrels and new and used barriques, followed by frequent bâtonnage for 6 months. The refinement in steel then concludes for 6 months.

Foscarino has an intense straw yellow color. The nose opens with hints of honey and wild flowers such as chamomile, elderberry and iris. On the palate it is mineral and broad, with a sweet almond aftertaste.

Perfect to accompany refined fish-based dishes such as soups and risottos, this white is worth trying with polenta and cod.
