Its origin is closely linked to the manual selection of clusters, carefully harvested in small crates to preserve their integrity and maintain a defined aromatic profile. How is it made
After a meticulous manual harvest, the wine undergoes secondary fermentation in the bottle following the rules of the Traditional Method. The distinctive feature of this process lies in the use of the solouva method, which relies solely on the natural grape sugars to trigger the second fermentation. Afterwards, the wine matures through extended lees ageing lasting at least twelve months. This phase consolidates the structure of the wine before the final disgorgement, enhancing its aromatic clarity.
