This sparkling wine is the result of Ottella’s precise production choice, focused on the pure use of a single red grape variety. Its origin is closely linked to the manual selection of clusters, carefully harvested in small crates to preserve their integrity and maintain a defined aromatic profile. This meticulous attention ensures a clear identity, expressing an ideal balance between vivacity and structure for enjoyable drinkability.

How is it made

After a meticulous manual harvest, the wine undergoes secondary fermentation in the bottle following the rules of the Traditional Method. The distinctive feature of this process lies in the use of the solouva method, which relies solely on the natural grape sugars to trigger the second fermentation. Afterwards, the wine matures through extended lees ageing lasting at least twelve months.
