What kind of wine is it?
The Jackal’s Dance by Neethlingshof Estate is a white wine made from Sauvignon Blanc, featuring a fresh and structured profile. Fermentation takes place exclusively in stainless steel, followed by aging on fine lees, which adds balance and body. The wine offers fruit and vegetal notes that clearly showcase the varietal character, making it a modern and balanced choice for an easy-drinking experience.
Where does it come from?
The Jackal’s Dance is produced in the Stellenbosch area, between the hills of Bottelary and Papegaaiberg, at 150–300 meters above sea level. The ocean breezes from False Bay favor temperature fluctuations and slow ripening. Deep clay soils provide good water retention, while the biodiversity of the vineyards creates a recognizable microclimate in a region with a long winemaking tradition and constant pursuit of quality.
How is it produced?
Harvesting is done by hand in the coolest hours with repeated selections. After destemming, the must ferments at a controlled temperature in stainless steel to enhance the primary aromas of Sauvignon Blanc. Aging on the fine lees continues until bottling, without the use of barrels or small woods, to preserve freshness and flavor vibrancy. The process follows precise winemaking protocols with regular microbiological controls.
Tasting notes
In the glass, it appears a clear and bright straw yellow. The nose reveals white pear, golden apple, and passion fruit, with hints of herbs and floral nuances. On the palate it is fresh and lively, with balanced acidity and echoes of gooseberry, citrus, and a touch of white pepper. The finish is savory and persistent, reflecting the maritime influence of the region.
Pairings
This Sauvignon Blanc pairs well with mushroom risotto, steamed mussels, and braised calamari, thanks to its freshness and structure. It also goes with grilled eggplant with herbs and artichoke salads with aged cheese. It is an excellent match for ceviche and fish and chips, as well as Mediterranean dishes like caprese, offering versatility across different cuisines.
When to serve
It is recommended to serve The Jackal’s Dance at 10–12 °C in medium tulip glasses to enhance its aromas and structure. The wine shows its best when young, preferably within 2–3 years after bottling, when freshness and aromatic precision stand out. Its good acidity makes it suitable for summer and outdoor lunches; its potential for aging remains moderate.
