Description
What kind of wine it is
Mollis by Ritterhof is a red wine produced in Alto Adige from the grape of the same name. This Merlot stands out for its soft and intensely fruity sensory profile. Careful winemaking delivers a balanced fruity structure supported by delicate tannins, offering a precise and consistent sip.
Origin
The grapes come from the vineyards of Coste and Termeno in Alto Adige, at an altitude between 450 and 500 meters above sea level. The vines take root in sandy soils of porphyritic origin, well-suited for the variety. These soils retain solar heat and gradually release it, ensuring regular and optimal ripening of the grapes.
How it is produced
The crushed grapes undergo controlled fermentation at 28°C for ten days. A long maceration allows for the targeted extraction of pigments and aromatic substances. The process continues with a twelve-month maturation in small French oak barrels followed by six months of aging in the bottle.
Tasting notes
In the glass, the wine reveals a ruby red hue. The nose opens with exuberant notes of black cherry, blended with balsamic hints and touches of spice. On the palate, it boasts a smooth texture led by ripe fruit. The progression is balanced, accompanied by refined tannins that add harmony.
Food pairing
Its expressive richness makes it ideal for main courses featuring red meats. It pairs naturally with flavorful grilled dishes, where its intensity balances out the succulence. It matches perfectly with aged cheeses, as the fruity component mellows the saltiness and refreshes the palate.
Serving occasions
This label is suitable for lunch or a meat-based dinner that calls for a solid pairing. The measured aging in wood imparts perfect roundness for classic convivial occasions. Serve it to enhance an earth-inspired menu, as it offers a clear territorial identity and precise flavor definition.
