Description

A pure Sauvignon Blanc whose first vintage dates back to 1956, comes from the most suitable vineyards of South Tyrol, from a manual harvest with a rigorous and thoughtful selection of the grapes. After the arrival in the cellar, there is the delicate pressing of the whole bunch and stripping for natural sedimentation. After a slow fermentation is carried out at controlled temperature in stainless steel tanks, then refined for 5-7 months on fine yeasts, partly in stainless steel barrels (80%) and for the remaining part in barrels large wooden. Assembly takes place one month before bottling.

Of a beautiful straw yellow color in the glass, with reflections that tend to greenish, it opens to the nose with a colorful bouquet in which the fruity hints of ripe apricot, mandarin and passion fruit stand out, which blend harmoniously with notes of elderberry, nettle and mint flowers. The pleasantly fruity taste is confirmed on the palate, enhanced by a marked freshness. A wine that stands out for its good structure and bouquet, so complex.

A wine that finds its highest pairing with boiled white asparagus on Bolzanina sauce, to combine it with an indigenous dish, as well as nettle dumplings, always from South Tyrol. Also try with a tuna carpaccio, smoked salmon and raw scampi.
