Description

Olmaia is a red wine produced in Montalcino, on the Sant’Angelo in Colle hill by Società Agricola Col d'Orcia. The grapes come from vineyards located at an altitude of 350 meters above sea level, facing south-southwest. The Cabernet Sauvignon vines, chosen for their Bordeaux clones, are carefully cultivated to obtain a product of the highest quality.

Fermentation takes place in steel vats, with maceration lasting 12-15 days at a controlled temperature, followed by malolactic fermentation in steel. The wine is then aged for 24 months in medium-toast French oak barriques with a brief period in American oak, and naturally stabilized in the cold winter. After bottling, the wine is left to mature further in the bottle.

It shows an intense ruby red color. On the nose, it releases notes of red fruit, integrated with classic varietal nuances and a spicy bouquet dominated by vanilla. On the palate, it features ripe tannins, pleasant freshness, and a balance between red fruit and spices, with a long, vigorous and refined aftertaste.

It pairs ideally with grilled red meats and aged cheeses, enhancing their flavors thanks to its structure and complexity.
