Toscana Pugnitello San Felice is a red wine made exclusively from Pugnitello grapes, an ancient native Tuscan varietal. It is produced in Castelnuovo Berardenga, in the province of Siena, and is vinified in steel with extended maceration on the skins. Ageing in French oak and further bottle refinement support a structured and complex style, offering a full mouthfeel and good savoriness.
Where does it come from
It comes from Tuscany, in the area of Castelnuovo Berardenga (Siena), where research in the experimental vineyards of San Felice led to the rediscovery of Pugnitello. The soils are of medium texture, rich in skeleton, predominantly calcareous-marly clays, a profile that provides ideal conditions to express deep color and a savory flavor profile.
How is it produced
Vinification takes place in steel, with fermentation and maceration on the skins for 20–25 days at 30 °C, to extract color and structural components. After malolactic fermentation, the wine matures for 18–20 months in French oak barrels, then further ages in the bottle for 8 months. These steps help to integrate the fruit and define a more harmonious evolution on the palate.
Tasting notes
Intense ruby red with violet reflections in the glass. The nose displays crisp complexity, recalling wild berry jam, tobacco, and cloves. On the palate, it is velvety, with notes of fruit and marked savoriness that accompanies a soft and fleshy overall sensation, maintaining persistence to the finish.
Food pairing
Naturally pairs with first courses with meat ragù, where structure and savoriness complement the richness and slow cooking. It is also recommended with roasted guinea fowl and turkey, as well as other white meats, thanks to its velvety texture and spicy profile that supports the dish without overpowering it.
