Cum Sanguis by Il Palazzo is a Tuscan red made exclusively from Sangiovese grapes. The winemaking process aims to preserve the purity of the fruit and provides a solid and well-ordered tasting experience. Where does it come from?

This red is produced in Tuscany, specifically in the province of Arezzo, where Il Palazzo has been operating since the 1970s. The Arezzo area provides ideal conditions for cultivating Sangiovese, promoting a ripening process that favors precision and expressive clarity. The territory gives the wine a measured balance between its fruity component and olfactory distinctness, resulting in an authentic and distinctive character.

How is it made?

The Sangiovese grapes are vinified in temperature-controlled stainless steel vats to ensure precise temperature control. The process includes a post-fermentation maceration on the skins lasting thirty days, an essential step to gradually extract color and structural components. Afterwards, malolactic fermentation takes place in steel under a controlled atmosphere to stabilize the flavor profile, before the final bottle ageing.

Tasting notes

In the glass, it shows a deep ruby red color, consistent with the prolonged skin contact. The nose opens with aromas of violet, currant, and raspberry, enriched by vegetal and spicy nuances of juniper berries.
