Description

What kind of wine is it

Libertà di Collazzi is a Tuscan red wine obtained from a careful blend of Merlot, Cabernet Sauvignon, and Cabernet Franc. The winemaking process involves fermentation at a controlled temperature to preserve the aromatic profile’s precision. This wine displays a measured and enveloping character, supported by a soft tannic structure and a flavor profile dominated by ripe fruit. Its style stands out for its formal elegance and overall harmony.

Where does it come from

This red wine is born in Tuscany, within an estate historically tied to Florence. The name recalls an important token of gratitude given by the city in 1376 to eight families, including the then-owners of Collazzi, for their valor in the defense of freedom. The vineyards enjoy a strategic location, being situated very close to the winery. This logistical aspect proves essential for minimizing the time between harvesting and processing.

How is it produced

Manual harvesting allows for accurate selection of the grape bunches in the vineyard, ensuring a quick transfer of the grapes. Each variety and individual plot is harvested and vinified separately. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of about twenty-five degrees, followed by malolactic fermentation. The aging process consists of twelve months in barrels and tanks, before finishing with six months in the bottle.

Tasting notes

In the glass, it presents an intense and vibrant ruby color in full alignment with the varieties composing the blend. The aroma reveals clear ripe fruit scents, offering a clean and essential bouquet. On the palate, it is enveloping, supported by soft tannins that guide the sip toward a well-defined balance. The flavorful progression is measured and remarkably long, guaranteeing a pleasant continuity without ever being overbearing.

Food pairings

Its well-balanced structure makes it a natural companion to red meat dishes and a variety of earthy preparations. It pairs extremely well with traditional roasts, where the softness of the tannins meets the succulence of the meat. It is also an excellent choice alongside selections of aged cheeses, balancing their natural savoriness with its pronounced fruity character. The wine’s aromatic profile enhances the dishes and maintains perfect harmony.

When to serve it

It is ideal for accompanying lunches and dinners where a glass of good depth is required, able to complement richly flavored menus. Thanks to the precise aging process, it fully expresses its potential at the end of its time in the bottle, a moment when the components reach an ideal balance. It is a red wine particularly recommended for convivial occasions and for the cooler months of the year, ensuring a rewarding and long-lasting tasting experience.
