Where does it come from
This red wine is born in Tuscany, within an estate historically tied to Florence. The name recalls an important token of gratitude given by the city in 1376 to eight families, including the then-owners of Collazzi, for their valor in the defense of freedom. The vineyards enjoy a strategic location, being situated very close to the winery. This logistical aspect proves essential for minimizing the time between harvesting and processing.
How is it produced
Manual harvesting allows for accurate selection of the grape bunches in the vineyard, ensuring a quick transfer of the grapes. Each variety and individual plot is harvested and vinified separately. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of about twenty-five degrees, followed by malolactic fermentation. The aging process consists of twelve months in barrels and tanks, before finishing with six months in the bottle.
