Description

What type of wine is it

Bollamatta Bibi Graetz is a rosé sparkling wine made from Sangiovese grapes grown in the hills of Fiesole, Tuscany. Fermentation takes place in temperature-controlled stainless steel tanks, while the secondary fermentation (sparkling process) follows the principles of the Charmat Method. This approach results in a fresh, creamy, and balanced style, characterized by a fruity aromatic profile and a clear, savory finish. The brief contact with the lees gives the wine a smooth and well-defined drinkability.

Where it comes from

The vineyards of origin are located in the municipality of Fiesole, in the hilly area north of Florence. The identity of the territory clearly emerges through a wine with a crisp character, able to highlight aromatic precision.

How it is produced

The production process begins with the manual harvest of the Sangiovese grapes. After a brief contact with the skins to extract the rosé color, the must ferments in temperature-controlled stainless steel tanks. The sparkling process occurs using the Charmat Method to preserve the primary aromas. A targeted aging on the lees precedes bottling, enriching the texture and offering a pleasant creamy sensation on the palate.

Tasting notes

It presents a pale pink color with a clear appearance. The olfactory profile reveals notes of red fruits, including cherry and wild strawberry, balanced by well-measured citrus nuances. On the palate it is fresh and enveloping, showing a harmonious progression. The savory finish rounds off the sip, leaving a pleasant and linear fruity aftertaste.

Pairings

Its natural liveliness pairs nicely with fish appetizers, where acidity helps cleanse the palate. It is also a suitable match for vegetarian first courses and typical crostini toscani, enhancing the flavors of the local cuisine. The wine’s creamy structure also makes it an excellent companion for sushi, creating a balanced pairing that harmonizes the meal and keeps each sip light and easy to enjoy.

When to serve it

It is an excellent choice for social occasions that call for a dynamic wine. Perfect to start a meal with appetizers, it also pairs versatilely with the whole dinner, particularly vegetarian recipes or Japanese cuisine. The use of stainless steel and the Charmat Method preserve the aromatic clarity, resulting in a wine focused on direct aromas and a streamlined, accessible structure.
