Fermentation takes place in temperature-controlled stainless steel tanks, while the secondary fermentation (sparkling process) follows the principles of the Charmat Method. This approach results in a fresh, creamy, and balanced style, characterized by a fruity aromatic profile and a clear, savory finish. The brief contact with the lees gives the wine a smooth and well-defined drinkability.
Where it comes from
The vineyards of origin are located in the municipality of Fiesole, in the hilly area north of Florence. The identity of the territory clearly emerges through a wine with a crisp character, able to highlight aromatic precision.
How it is produced
The production process begins with the manual harvest of the Sangiovese grapes. After a brief contact with the skins to extract the rosé color, the must ferments in temperature-controlled stainless steel tanks.
