Toscana Vermentino di Viticcio is a white wine made exclusively from Vermentino grapes. Vinification takes place in stainless steel without malolactic fermentation, a technical choice aimed at preserving varietal freshness and aromatic clarity. Thanks to aging on the lees, the wine achieves a full-bodied yet smooth structure, maintaining an elegant and distinctly savory style.
Where does it come from
This white originates in the Pignatelli Magliano area, where the vineyards benefit from the climate influence of proximity to the sea. The vines are cultivated at 200 meters altitude on sandy soils and silty soils rich in sandstone, a terroir that gives the wine a dry texture on the palate. Vineyard management follows methods that ensure balanced ripening thanks to south and southwest exposure.
How is it produced
The production process involves fermentation in stainless steel tanks at low temperatures, around 13°C, to protect the fruit’s fragrance. Malolactic fermentation does not take place, allowing the wine to retain a vibrant acidic tension. This is followed by four months of aging on the lees, enriching the sip with roundness, and finishing with cold stabilization to preserve aromatic purity.
Tasting notes
In the glass, it appears as a bright straw yellow color with greenish highlights. The bouquet evokes a sea breeze, accompanied by floral notes of acacia and hawthorn, with fruity hints of pear and pineapple intertwined with sage nuances. On the palate, the sip is full and savory, characterized by a mineral note and a persistent finish with a slightly bitter aftertaste.
Pairings
Its pronounced sapidity makes this Vermentino ideal with raw seafood, shellfish, and grilled fish, where the wine’s freshness balances the sweetness of the flesh. It also pairs beautifully with vegetarian dishes enriched with aromatic herbs reminiscent of sage. In a regional context, it’s perfect with cacciucco or spaghetti with clams, as it supports intense flavors without overpowering the delicacy of the main ingredients.
