Description
Vènis, a Sauvignon Venezia DOC, pays homage to the mercantile heritage of Venice, recalling the sumptuous banquets of the eighteenth century enriched with spices and exotic delicacies perfectly paired with Sauvignon Blanc. Produced on the Le Ronche farm in Fossalta di Piave, this area, located a short distance from the Adriatic Sea and the Dolomites, boasts an alluvial soil of white clay and dolomite rock, ideal for the varietal expression of Sauvignon Blanc. The planting density varies between 6,000 and 8,400 vines per hectare, trained using the Guyot method on vineyards planted between 1986 and 2021.
Vineyard management aims to optimize grape ripening through precise topping and limiting production to ensure highly fragrant grapes. The harvest takes place at the beginning of September, when the grapes reach perfect aromatic maturity while maintaining adequate acidity. Winemaking includes soft pressing of the whole grape, cold decantation of the must and controlled temperature fermentation. The wine then matures on the yeasts, with frequent stirring to enrich its aromatic complexity and organoleptic harmony.
On the organoleptic front, Vènis stands out for its decidedly aromatic profile, enriched by exotic notes of citrus and elderberry, a broad palate and a marked minerality. This expression of Sauvignon Blanc is a tribute to the aromatic richness of the varietal, offering an intense and memorable tasting experience.
As for gastronomic pairings, Vènis proves to be an ideal companion for seafood dishes such as spaghetti with clams, grilled sea bass, fried calamari and wild salmon. It is also exceptional with asparagus-based dishes, demonstrating a versatility that makes it a perfect addition to a wide range of cuisines. The optimal serving temperature is between 8-10°C, allowing the wine to best express its aromatic bouquet and liveliness.
