Trento Riserva Pas Dosé DOC 2015 Bonconsey

Trentodoc Riserva Pas Dosé Bonconsey is produced in Trentino from Chardonnay grapes.

With an evocative name and able to recall the elegance and elevation of the most important castle in Trentino, this Trentodoc is made with grapes grown on calcareous-marly soils facing south. After manual harvesting, the grapes are vinified following a short maceration on the skins at a low temperature. After pressing, the must ferments in steel and, in part, in used wooden barriques. The cuvée is also created with the addition of reserve wines before refermentation in the bottle. With a rest on the lees for at least 40 months, it rests for another 3 months before being marketed.

Intense straw yellow color, it has a dense perlage, of great finesse and persistence. A lot of elegance accompanies the olfactory profile, with hints of exotic fruit, almond and yeast. On the palate it is structured, mineral, of great freshness with tones of cedar, orange peel, buttery and candied notes, for an enveloping and well-finished sip.

Ideal with grilled salmon and shellfish, it can accompany liver crostini and blue cheeses.
