The Chardonnay Clásico from Ventisquero is a well-balanced white wine produced in Chile. The vinification of the Chardonnay grapes involves a combination of stainless steel containers and French oak barrels, ensuring a precise and well-defined structure. The aromatic profile focuses on fruit and minerality, delivering a fresh and savory taste with remarkable persistence on the palate.
Where it comes from
The Chardonnay Clásico originates from Chile, within the Central Valley designation. It is crafted by the winery Ventisquero, an establishment founded in 2000 whose name in Spanish means glacier. This winery operates in several high-potential areas of the country, including the Maipo Valley, Casablanca Valley, and Apalta Valley, shaping a production style aimed at maximum aromatic clarity.
How it is produced
The grape harvest takes place between February and March. Once at the winery, the grapes are fermented in stainless steel tanks, where controlled temperature fermentation occurs between twelve and sixteen degrees to preserve clean aromas. Afterwards, a portion is aged for four months in French oak barrels, while the remainder matures in stainless steel, combining the grape's natural liveliness with a measured wood-aged character.
Tasting notes
In the glass it shows a clear straw yellow hue with slight greenish reflections. On the nose, it presents intense aromas of tropical fruit, with clear notes of papaya, mango, and pineapple, well complemented by subtle mineral hints. On the palate, it is smooth and lively, offering a savory and persistent sip that finishes coherently and orderly.
Food pairing
Thanks to its natural liveliness, this white pairs ideally with first courses and various fish-based dishes, where the savory components effectively cleanse the palate.
