Valle de Casablanca DO Sauvignon Blanc Reserva 2019 Dos Almas

Dos Almas Sauvignon Blanc Reserva comes from the sandy and clayey soils of the Valle de Casablanca, an area where Sauvignon Blanc grapes have the opportunity to fully express their characteristics of freshness.

After the grapes have been harvested when they reach full maturity, with a nocturnal harvest taking place within the first half of March, the must is sent to fermentative processes protecting it from contact with oxygen. After a slow fermentation at controlled temperature, the wine remains in contact with its lees for 3 months.

It is pale yellow-greenish in color. The nose is complex and elegant, with citrus aromas of lime and grapefruit that blend with hints of tropical fruit including pineapple and pear. On the palate it proves a mineral and elegant wine, with vibrant acidity.

Excellent as an aperitif, it goes well with seafood dishes and salads, such as ceviche, and with fish dishes in general.
