Description

What kind of wine it is

Valpolicella Classico Superiore by Zýmè is an enveloping red wine, obtained from a carefully crafted blend of Corvina, Corvinone, Rondinella, and Oseleta. Vinification involves an initial fermentation in stainless steel tanks at natural temperatures, followed by a second fermentation using the traditional Ripasso method in contact with the Amarone skins. A long maturation in Slavonian oak barrels enriches the structure and delivers a balanced flavor profile, with a pleasant savoriness that invites you to take another sip.

Where it comes from

The grapes for this red come from vineyards located in Negrar, one of the historic towns at the heart of the Valpolicella region. This geographic area, located in the province of Verona, is renowned for its wine-making vocation, especially for growing local red grape varieties. The identity of the hilly territory is clearly reflected in the glass, seamlessly merging aromatic components with the fruit and savoriness typical of Veronese soils.

How it is produced

The bunches are carefully hand-selected before starting the initial fermentation in steel vats at natural temperatures. Subsequently, the must undergoes a second fourteen-day fermentation on the Amarone skins, an essential step to increase the complexity of the substance. The production cycle is completed with a long maturation in wood, followed by bottle aging for six months before being released on the market.

Tasting notes

In the glass, it displays a ruby red hue, capable of developing deep garnet reflections as it ages. The aromatic profile offers a nuanced bouquet where aromas of ripe cherry and marasca stand out, accompanied by delicate hints of slightly dried plums. On the palate, it is extremely smooth and enveloping, supported by a good saline texture that leads to a spicy and fruity finish.

Food pairings

Its pronounced roundness makes it a perfect partner for cold cuts and cheeses with medium aging, effectively balancing their savory and fatty components. It is also greatly appreciated alongside warm first courses like soups, typical of daily cuisine. In addition, its smooth structure and clean finish beautifully enhance white meat dishes, creating a highly enjoyable taste experience.

When to serve

This red is the ideal label to enrich moments of conviviality at the table, thanks to its welcoming and versatile character. The use of the Ripasso method and meticulous aging yield a wine that is fully enjoyable right from its release, though it harbors an interesting aging potential. Whether tasted in its youth to appreciate its aromatic clarity or left to rest in the cellar to allow the aromas to integrate, it always ensures a rewarding experience.
