Description
From the vineyards of Tenuta di Tregnago, in the upper Val d’Illasi, Mezzane di Sopra, and the hills of Tregnago, and from a blend of Corvina, Corvinone, and Rondinella comes Ripasso Monte Zovo, a fine expression of Valpolicella Classica. The calcareous and marly soil gives the wine personality, verve, and character.
Harvest begins at the end of September, with the handpicking and careful selection of the best grapes, which are destemmed and crushed before starting fermentation in stainless steel. The alcoholic fermentation lasts about 15 days at a controlled temperature of 20-24°C. Afterwards, the wine is separated from the skins with a gentle press and stored in steel tanks until the dried grapes for Amarone production are crushed. At this point, the wine is “ripassato” over the Amarone pomace for 15 days at a controlled temperature of 24°C. Ageing lasts 24 months in tonneaux and casks.
Deep red in color with garnet reflections, it has aromas of blackberry, cherry, and raspberry on the nose. Floral hints of geranium and violet emerge, followed by toasted coffee notes, leather, and plum. The palate is soft, balanced in freshness, and with a dense tannic structure.
Perfect to accompany grilled meats, it will be simply sublime paired with flavorful first courses such as pasta with sausage. Try it with pumpkin-filled tortelli.
