What kind of wine is it

Veneto Passionesentimento by Pasqua is a still red wine from eastern Valpolicella. The blend of Merlot, Corvina, and Croatina offers a structured and complex style, enhanced by partial drying of the grapes and aging in oak tonneaux. The wine matures for six months in wood, revealing depth and a velvety texture.

Where it comes from

The grapes for Passionesentimento come from the sunny slopes of eastern Valpolicella, in the province of Verona. The region's rich viticultural heritage is reflected in the wine's character.

How it is made

The harvest is carried out by hand, with only the best bunches selected. The grapes rest in wooden crates in the drying loft until partially dehydrated, losing about 30% of their weight and concentrating their aromas and sugars. The varieties are vinified separately in stainless steel at controlled temperatures. The final blend is aged for six months in oak tonneaux, developing further complexity and harmony.

Tasting notes

Passionesentimento displays an intense ruby red color with purple highlights. The nose offers notes of ripe red fruits and spicy hints. On the palate, it is full-bodied and enveloping, with soft tannins and balanced freshness. The finish extends with lingering fruit notes and subtle toasted nuances.

Food pairings

This wine pairs well with flavorful first courses, roast meats, and aged cheeses. It also goes wonderfully with mushroom dishes, where its earthy and spicy notes come to the fore.

When to serve it

Passionesentimento can be enjoyed both young and after a few years of aging. In its early years, its fruity freshness prevails; over time, it becomes more complex, with spices becoming more pronounced.
