Description

What kind of wine is it

Cogito A by Mirizzi is a white wine made from Verdicchio grapes grown in the Marche. Classified as Verdicchio dei Castelli di Jesi Classico Superiore, it stands out for a technical profile focused on aromatic definition and balance. Ageing on the lees in concrete vats gives it a full and smooth style, as it retains a balanced freshness which consistently introduces the character of the territory and the production process.

Where it comes from

Production originates in Monte Roberto, in the renowned Castelli di Jesi area, a part of the Marche famous for its agricultural vocation. The vineyards sink their roots into yellow sandstone marl soils characterized by a sandy consistency, a decisive aspect that contributes to the wine's clear and orderly character. The identity of this label is deeply linked to a precise origin, able to enhance the characteristics of the grape variety authentically.

How it is produced

The grapes are carefully selected for a traditionally inspired winemaking process. Fermentation takes place in concrete vats, followed by ageing on the lees for eight months, a choice aimed at supporting texture and tasting continuity. The entire process is carried out partly outdoors, with partial temperature control, an operating condition that ensures the regular development of the aromatic profile.

Tasting notes

In the glass, the wine presents itself with a clean-looking straw yellow hue. On the nose, it opens with an intense and well-defined scent, where clear hints of hawthorn and bergamot emerge, enriched by notes of pineapple and custard. On the palate, the first sip offers a full and smooth mouthfeel, supported by a well-integrated freshness that ensures smoothness and a coherent finish.

Pairings

At the table, this Marche white expresses all its potential with seafood dishes of medium structure, where the roundness of the sip blends with the natural savoriness of the ingredients. The suggested pairing enhances classic preparations such as tagliatelle with seafood, as its fresh profile provides natural support. It is also recommended to accompany firm meats such as monkfish, thanks to a flavour profile capable of matching compact textures without overshadowing them.

When to serve

It is the perfect choice to accompany a lunch or dinner based on fish dishes, thanks to its precise and accessible character. Its refreshing structure makes it suitable both as an opening glass and as the main wine throughout the meal. Served at a cool and suitable temperature, it clearly expresses all its aromatic potential, thus offering a tasting experience that highlights the purity of fruit and aromas.
