Sauvignon Oltremonte by Monte Zovo is a still white wine made from Sauvignon Blanc grapes cultivated in the Verona area. The winemaking process involves fermentation at a controlled temperature and a short period on the lees, which help preserve freshness and aromatic precision. Its profile is dry, mineral, and linear, with a medium structure designed to be enjoyed young.
Where does it come from
This Sauvignon Blanc originates from the hilly area of Oltremonte, in the Verona territory. The soil and climate conditions contribute to a balanced and clean profile.
How is it produced
The grapes are harvested by hand and placed in wooden crates to preserve the integrity of the bunches. After destemming and crushing, the must undergoes gentle pressing and cold clarification. Fermentation takes place at 15–16 °C to limit oxidation and retain primary aromas. The wine rests on the lees for about three months and is then refined in the bottle for another four months.
Tasting notes
On appearance it shows a straw yellow color with greenish highlights. The aroma offers a precise bouquet with vegetal hints of sage and green pepper, followed by notes of citrus and white peach. On the palate it is dry, mineral, supported by good acidity, with a clean and persistent progression. The finish is savory, with citrus returns.
Food pairing
Pairs well with light appetizers, vegetable-based first courses, delicate soups, and shellfish. Its freshness and savoriness also make it suitable for vegetarian dishes or for ethnic cuisine preparations with moderate spices.
When to serve it
Ideal as an aperitif white or to accompany fish or vegetable-based lunches and dinners. Serve chilled and preferably consume young to best appreciate its aromatic liveliness. Once opened, keep refrigerated and drink within a short time.
