Description
What kind of wine it is
Bleu Cerise by Maison Chanterêves is a red wine with an unconventional character classified as Vin de France. Made from a blend of Gamay and Aligoté, it stands out for its light and lively profile, focused on freshness and drinkability. Its crisp acidity combines with a delicate yet persistent structure, offering an easy-drinking and pleasantly refreshing tasting experience.
Where it comes from
The grapes used for this label mainly come from parcels located in the Hautes Côtes de Beaune. Maison Chanterêves’ agricultural philosophy is rooted in an artisanal approach that deeply respects the land. Cultivation follows uncertified organic and biodynamic practices with a special focus on biodiversity and the maintenance of soil vitality to preserve the fruit's original expression.
How it is produced
The winemaking process begins with a prolonged pressing of about six hours, a crucial step in defining the wine's style. Fermentation starts spontaneously using a pied de cuve, without further corrective interventions. The wine then ages for twelve months in oak barrels of various sizes and is eventually bottled without fining or filtration, preserving its aromatic integrity.
Tasting notes
In the glass, it shows a restrained color intensity, fully consistent with its light character. The aromatic profile opens with fresh and floral scents, enriched with notes of strawberry, ripe lemon, and a delicate hint of peach. On the palate, it flows dynamically, supported by a delicate yet persistent structure and the vivid tension provided by the Aligoté, ending with a dry and savory finish.
Food pairings
This agile and refreshing red naturally accompanies light appetizers and enhances flavors without ever overpowering them. Its bright character makes it an excellent match for various raw fish dishes, such as tuna tartare, thanks to its clean finish and impressive tension. It also pairs beautifully with vegetarian cuisine and vegetable-based dishes, highlighting textures and keeping the palate fresh.
When to serve it
It’s the perfect bottle to open when you want a light and lively profile, ideal for an aperitif or a casual meal. Its aromatic freshness makes it particularly suitable for moments calling for an easy and precise drink, free of heavy structure. Thanks to its essential processing and lack of filtration, it offers a pure fruit expression that is immediately satisfying on the palate.
