Bleu Cerise by Maison Chanterêves is an unconventional red wine classified as Vin de France. Made from a blend of Gamay and Aligoté, it stands out for its light and vibrant profile, focused on freshness and drinkability. Where does it come from
The grapes for this label mainly come from parcels located in the Hautes Côtes de Beaune. The agricultural philosophy of Maison Chanterêves is based on a deeply artisanal approach, with great respect for the land. Cultivation follows uncertified biodynamic practices and pays particular attention to maintaining the vitality of the soil, in order to preserve the fruit’s original character.
How is it made
The winemaking process begins with extended pressing of about six hours, a key step in defining the wine’s style. Fermentation starts spontaneously by using a pied de cuve, without further corrective interventions. The wine then matures for twelve months in oak barrels of various sizes and completes its journey with bottling that excludes fining and filtration, to keep its aromatic integrity intact.
Tasting notes
In the glass, it shows a subdued color intensity, perfectly in line with its light nature. The aromatic profile opens with fresh floral aromas, enriched by notes of strawberry, ripe lemon and a delicate hint of peach. On the palate, it is smooth and dynamic, supported by a delicate yet persistent structure and the clear tension provided by Aligoté, finishing with a dry and savory aftertaste.
