Description
This Chardonnay Le Noyer by Pierre Girardin comes from a small clos of a few hectares located at 470 meters above sea level in the village of Rotalier, from vines over 60 years old grown organically on limestone-clay soils.
The fermentation takes place with indigenous yeasts and continues in 600-liter oak barrels (about 50% new); the wine is neither clarified nor filtered to preserve its purity and integrity.
It impresses with its clear and mineral aromatic profile, with toasted notes, butter, and dried fruit, accompanied by richness and structure; on the palate, it reveals itself as dry, savory, and deep, with elegant acidity and a persistent finish.
To be enjoyed with baked fish or white meats in light sauce.
