Description
The sparkling Rosé Extra Brut wine Ziik from Tenuta Casenuove originates on the hills surrounding Greve in Chianti from Sangiovese grapes, sparkling using the Charmat method.
The Sangiovese harvest takes place over the weeks straddling August and September. Once in the cellar, the grapes undergo gentle pressing, constantly monitored by tastings aimed at capturing the evolution of acidity to determine the most suitable moment to end the press. This is followed by a static cold decantation of the resulting must, without the use of any additives, and its subsequent alcoholic fermentation at a controlled temperature in steel tanks. After resting on the lees for over 5 months, the wine is bottled.
In the glass, the wine appears a pale pink color with a fine and persistent perlage. On the nose it reveals floral aromas of rose and fresh red fruit like currant and wild strawberry. On the palate, it is lively, fresh, and savory.
This sparkling rosé pairs well with raw seafood and meat appetizers, fresh cheeses, and cured meats.
