Description
What type of wine is it
Volnay 1er Cru Les Caillerets by La Pousse d’Or is a red wine from Burgundy. Made from Pinot Noir grapes from the En Caillerets plot, it displays a broad and structured character with remarkable density. The winery favors fermentation with indigenous yeasts and aging on fine lees in oak barrels, to preserve the integrity of the raw material and to avoid filtration and fining.
Where it comes from
The vineyards are located in the heart of the Côte de Beaune, where the soil is notable for its high presence of limestone marl and clay. The vines grow with a favorable east-facing aspect on the mid-slope of the hill, a position that ensures proper drainage and steady ripening. Agricultural management follows the principles of biodynamic cultivation and refrains from insecticides and pesticides to enhance the authentic character of the terroir.
How it is produced
Manual harvesting is followed by meticulous selection and destemming of the grapes. The must undergoes a week-long cold maceration to gradually extract aromatic compounds before fermentation begins in tanks. The wine is aged for at least fifteen months in oak barrels in contact with the fine lees, shaping its structure in a natural way.
Tasting notes
In the glass, it shows a clear ruby red hue, introducing an aromatic profile where vibrant red berry notes mingle with delicate herbal nuances. Time spent in wood enriches the profile with well-balanced vanilla notes. On the palate, it is dense and deep, providing a sense of consistent progression that fades into a clean finish, true to its lengthy maturation.
Food pairings
The wine's concentration makes the bottle ideal for accompanying hearty first courses and rich dishes. It pairs well with red and white meats as well as game, enhancing flavors thanks to its dense structure. Regionally, it is the perfect companion for French classics, supporting the succulence of boeuf bourguignon or the spicy nuances of coq au vin.
When to serve
Its complex profile makes it the right choice for convivial dinners, where dishes require an equally solid balance in the glass. The lack of filtration and the careful cellar process deliver a sip with vibrant expressiveness, ready to stand up to bold flavors. It's a bottle to open whenever a well-defined structure and aromatic freshness are desired, ideal also for rich meats.
