What kind of wine is it?
Volnay Santenots du Milieu Premier Cru by François Mikulski is a Pinot Noir from Côte de Beaune, Burgundy. It stands out for its elegant style, harmonious structure, and freshness that supports its drinkability. The grapes come from two family plots planted in 1947 and 1976, organically farmed but uncertified, on particularly suitable soils. Vinification takes place in vats, while ageing in oak barrels adds complexity and ageing potential, providing a precise and deep profile typical of the Premier Cru area.
Where does it come from?
The Santenots du Milieu cru is located in Volnay, in the Côte de Beaune, a benchmark area of Burgundy. The vineyards lie on very suitable soils, and a temperate climate with strong temperature variations helps define the elegance, finesse, and mineral profile characteristic of this slope.
How is it produced?
Fermentation takes place in vats for 15-17 days, ensuring a balanced extraction of colour and tannins. Ageing continues for at least 14 months in oak barrels, with about 35% new wood. The process avoids heavy filtration and invasive fining and preserves the purity and freshness of the fruit.
Tasting notes
It shows an intense ruby red colour with purple highlights. The bouquet is complex, with notes of ripe cherry, wild blackberry, black pepper, and hints of liquorice, tobacco, and dark chocolate. The palate entry is fresh and linear, with silky tannins and well-integrated acidity that guides the sip to a persistent finish with fruity and spicy tones.
Food pairings
This Pinot Noir pairs with grilled red meats, braised dishes, and game. It enhances dishes such as peppered beef fillet, stewed wild boar leg, and coq au vin. It also brings out the best in risottos with radicchio and porcini, pappardelle with venison ragout, and beef tartare with horseradish. Its structure and freshness make it suitable also for soft cheeses like Reblochon or Brie, highlighting the complexity of flavours.
When to serve
It is best served at 16-18 °C in large glasses to encourage aeration. It’s preferable to uncork the bottle just before serving and let it breathe for about thirty minutes to fully release its bouquet. Thanks to its ageing potential, it develops well over time, evolving towards notes of leather and undergrowth. Suitable for elegant occasions or contemplative tastings.
