With Monte Rossa you are faced with a company that occupies a leading position in Franciacorta. The places are those included between Monte Orfano and Lake Iseo, made up of a succession of hills with a spectacular landscape impact. The soil of Franciacorta, of mainly morainic origin, is one of the first factors to facilitate quality viticulture, giving wines rich in minerality and elegance. A territory full of ideas, Franciacorta has succeeded in enhancing the Classic Method by raising the very concept of sparkling wine and exhibiting territorial peculiarities that make the work of the individual wineries strongly identifying. Quite recently, the birth of Monte Rossa refers to the figure of Paolo Rabotti who in 1972 decided to start a production business to progressively devote himself to sparkling wines, focusing on technology and experimentation as distinctive features of his entrepreneurial project. With about 70 hectares available, Monte Rossa has now produced 500,000 bottles, among which the Cabochon line stands out, initially born from a more careful selection of the crus to be vinified and the use of the barrel for the fermentation of the base must. A lot of passion and trust in Cabochon allowed Luca Rabotti to dedicate a short noir to the project to celebrate 45 years of Monte Rossa and 30 of Cabochon.

The ability of Monte Rossa to integrate with the territory and to accredit its own production philosophy over time are aspects that continue to show great dedication to this land and without the search for excessive stylistic customizations but with a strong recognition that can leave imprinted on the firmament of the Franciacorta a strong corporate style. Starting from the elegance of the labels, the sense of continuity and coherence immediately transpires, while the great visual impetus suggests a noble and refined product. Having partly owned vineyards and partly rented land, Monte Rossa is careful to qualitatively preserve the grapes with the sole purpose of giving an experience to the palate that revolves around the bottle but also to the many occasions that led to tasting. .
Why try the Monte Rossa Cabochon Rosé?
Monte Rossa Cabochon Fuoriserie Rosé is definitely the company's wine to try without hesitation. It is a blend of Chardonnay and Pinot Nero grapes obtained from Cru placed on hilly reliefs affected by strong air currents and raised on soils of morainic origin. After the selection in the vineyard, the grapes are transported to the cellar for soft pressing while maintaining a very low yield. Fermentation in steel and oak barrels follows before aging for 40 months. With a beautiful pastel pink color, the Fuoriserie Rosé has a nose of yellow-fleshed fruits such as mango and peach, with nuances of white pepper and peony. On the palate it is direct and fresh, with a good acid and saline note that still releases a fruity touch in the finish.
