Pierre Legras
The Maison can boast ancient origins. Pierre Legras was born in Chouilly in 1662, even before Champagne. The family has been cultivating vineyards in the Côte des Blancs for eleven generations and today it represents the continuation of a history, which runs parallel to that of the most famous wine in the world. The Pierre Legras labels keep intact the charm of an ancient savoir-faire, which has spanned the centuries, handed down as a precious family heritage. In 2002, after completing his studies in Oenology, Vincent Legras decides to exploit the ancient traditions and to found the Maison Pierre Legras, dedicating it to his illustrious ancestor. The property is progressively enriched with new parcels, passing from 5 to 10 hectares of vineyards. Today the domaine represents a splendid expression of the Grand Cru of Chouilly, a small village in the Côte des Blancs, which has always been known for its excellent quality of chardonnay, even if there is no lack of plots cultivated with pinot noir and meunier. The soil is mainly composed of outcropping gypsum, with a high percentage of calcite granules, deriving from the fossils of marine micro organisms.
The vines are managed with care and passion, with grassy inter-rows, organic fertilizers and limited use of treatments, only when absolutely essential, in order to preserve a balanced natural environment. Fermentations take place separately for each single parcel and the cellar is equipped with 27 stainless steel tanks and a dozen barrels for the fermentation or refinement of the vins clairs. In this way, the Maison can have a wide range of choices, when creating the final assemblies, for the realization of the various cuvées. The style of the Maison foresees the development of malolactic fermentation, in order to reduce the acidity of the base wines and give the Champagne a softer and more complex face, with the typical aromatic nuances of pastry, brioche and honey. For the elaboration of the labels of the classic line, vins clairs refined in steel are used, in order to preserve the fruity and floral fragrance, as well as a pleasant smoothness of drink. For the preparation of the prestige cuvées, however, wines aged in wood are also used, which give greater volume and a richer aromatic complexity to Champagne. Pierre Legras' labels authentically represent the splendid terroir of the Grand Cru of Chouilly, with the elegance and expressive freshness that are a true stylistic signature of the Maison.
