Parmigiana, Norma or Moussaka?

Eggplant offers dishes with a robust structure that require wines of strong character. For the classic Parmigiana, a fresh red like Cerasuolo di Vittoria or a Barbera d'Alba is ideal: their acidity is essential to cleanse the palate from the fried coating and to balance the succulence of the tomato and cheese.

In pasta alla norma, the balance is played between the savoriness of salted ricotta and the sweetness of seasonal vegetables. A Frappato or a full-bodied rosé are the perfect companions, as they offer a lively drinkability that enhances the basil without overpowering the contrasts of the sauce.

For moussaka, the presence of meat and béchamel demands more structure. A Primitivo del Salento or a Syrah are excellent choices: their velvety tannins and spicy notes interweave masterfully with the richness of the dish, supporting every layer of flavor.
