Description
The Amarone della Valpolicella Classico “Rugola” from Fabiano is a red wine of great tradition produced in the classic Valpolicella area in Veneto. It is created from a blend of Corvina Veronese and Corvinone together with Rondinella, grown on calcareous-eocene soils and trained using the traditional Veronese pergola system on terraced slopes supported by dry stone walls. This wine represents one of the most prestigious expressions of the region, obtained from carefully selected grapes and crafted according to historic winemaking practices.
The production follows the traditional appassimento technique, during which the grapes are left to rest for about one hundred days to concentrate aromas and structure. They are then gently pressed and partially destemmed, leading to a long fermentation in steel tanks with an extended period of maceration on the skins; the wine then undergoes aging, which develops complexity, depth, and balance.
It displays a deep ruby red color. On the nose, it reveals broad and enveloping aromas with elegant notes of vanilla, ripe cherry, plum, and subtle hints of coffee. On the palate, it is full-bodied, warm, and velvety, with a substantial structure and a long, harmonious finish.
It pairs beautifully with braised meats, game, and aged cheeses with intense flavors.
