What kind of wine it is
Amarone della Valpolicella is a red wine made from a blend of Corvina Veronese, Corvinone, Rondinella and Oseleta, designed to deliver structure, concentration and depth.
Where it comes from
The grapes come from vineyards on the hills north of Verona. The wine bears the signature of Colognola ai Colli.
How it is made
The grapes, carefully selected in the vineyard and harvested in small crates, are left to dry for about three to four months in dry, well-ventilated rooms. After crushing, fermentation takes place in temperature-controlled stainless steel tanks and lasts about thirty days, followed by a few months of maturation in concrete during which malolactic fermentation occurs. Ageing then continues for about three years in medium and large oak casks, with at least six months’ rest in bottle.
Tasting notes
It shows a deep red color, with slight garnet highlights that turn toward brick with age. On the nose it offers red-fruit jam aromas and spicy notes. On the palate it is full, velvety and persistent, with typical cherry tones enriched by nuances of vanilla and coconut.
Food pairing
Thanks to its structure and intensity it pairs particularly well with braised dishes, roasts, game, flavorful red meats and aged cheeses, and is also enjoyable as a meditation wine.
When to serve it
Its substantial structure makes it suitable for hearty meals in the cold season, but also for solitary enjoyment, as a meditation wine. We recommend uncorking it well before serving and pouring at around 18°C, to let its complexity and softness fully emerge.
