Description
Valtuille Cepas Centenarias is an iconic red wine produced from a single plot located in the sandy-clay area of Mata los Pardos, one of the most renowned and low-yielding crus of Valtuille. The vines, over one hundred years old, are tilled every year to preserve the vitality of the soil, and have extremely low yields.
Harvesting is done by hand, and part of the grapes is left whole to spontaneously ferment in wooden vats. Maceration lasts for about 60 days with daily gravity punch-downs. After racking, the wine rests for one or two months, then ages for a year in used barrels. Bottling takes place after a selection of the best barrels.
The nose reveals black fruits, violet, ferrous notes and nuances of aromatic herbs. The palate is deep and velvety, with silky tannins and a pronounced minerality reflecting the sand and clay of the soil.
Ideal with braised red meats, game, or rich local traditional dishes.
