Description
Valtuille Villegas is a highly refined red wine, originating from a single plot located in the upper, sandy part of the Villegas area, one of the few zones with this type of soil in the municipality of Valtuille de Abajo. The century-old vines produce grapes of excellent quality, thanks also to the low yield and meticulous care taken in the vineyard. The wine is classified as a "vino de paraje," a testament to its strong connection to its territory of origin.
The harvest is done by hand at the beginning of the picking season. 30% of the grapes are vinified whole in a large wooden vat. Fermentation occurs spontaneously, without added yeasts and without temperature control. The must macerates for about 35 days, with daily punch-downs by gravity. After racking, the wine rests for one or two months, then ages for a year in used barrels.
The wine stands out for its aromas of wild berries, dried flowers, wet earth, and light spices. On the palate, it is elegant and balanced, with fine tannins and a fresh savoriness that makes it easy to drink yet profound, with a long, mineral finish.
It pairs beautifully with braised meats, mushrooms, or substantial autumn dishes.
