Description
Non Plus Ultra Reserva is a traditional cava from D.O. Cava produced by Codorníu with the classic Macabeu, Xarel·lo, and Parellada grape varieties from organic vineyards in the Penedès region. This sparkling wine represents one of the most historic expressions of cava, created at the end of the 19th century and valued for its elegance, balance, and faithfulness to tradition. The Mediterranean climate of the area promotes early grape maturation, preserving freshness, acidity, and aromatic finesse.
The winemaking process involves the separate fermentation of the must from each variety after destemming and gentle pressing. The base wine is then blended, and with the addition of liqueur de tirage, bottled to start the second fermentation following the traditional method. The bottles mature on the lees in underground cellars at a constant temperature for a long period, developing complexity and structure before disgorgement and the addition of liqueur d’expédition to set the Brut dosage.
It displays a pale and elegant color with a fine and persistent perlage. The nose offers a fresh and clean bouquet with notes of citrus, apple, and almond blossom, accompanied by hints of dried fruit, honey, and light toasty notes from lees aging. On the palate, it is creamy and elegant, with pleasant freshness and a long finish.
Perfect to enjoy on its own or paired with white meats, cold appetizers, carpaccio, seafood salads, and dishes with dried fruit.
