Description
Chavost's Champagne Blanc de Chardonnay Brut Nature is made exclusively from Chardonnay grapes grown on north-facing clay-limestone soils. The vineyards, certified organic, are carefully tended to preserve the natural balance and enhance the authentic expression of the terroir, with the harvest carried out by hand at the optimal stage of ripeness.
The winemaking process takes place entirely in temperature-controlled stainless steel tanks, without the use of added sulfites, enzymes, or invasive fining. Alcoholic fermentation occurs spontaneously thanks to indigenous yeasts, followed by natural malolactic fermentation; the wine undergoes no filtration or acid adjustments, thereby retaining its integrity and expressive purity up to bottling and ageing on the lees, with no final dosage.
On the nose, it reveals yeasty and creamy notes, enriched by delicate floral hints and subsequently by mineral touches and suggestions of toasted bread and yellow fruit. The palate opens round and fresh, with a rich and slightly chalky texture supporting an elegant, flowing sip, finishing light and harmonious.
