Description
The Champagne Brut Nature by Chavost is produced in the Champagne region, made from Chardonnay and Meunier grapes grown on clay-limestone soils with a northern exposure. The harvest is carried out by hand at the optimal stage of ripeness and follows sustainable viticulture principles, with special attention to the natural balance of the vineyard and the authentic expression of the terroir.
Vinification takes place 50% in large barrels and the remaining 50% in temperature-controlled stainless steel tanks, without the addition of sulfites. This approach preserves the purity of the fruit while giving complexity and structure to the wine, which continues its aging on the lees before being disgorged with no dosage.
On the nose, it is intense and enveloping, with notes of baked goods and pastry accompanied by hints of ripe pear and marked freshness. On the palate, it is initially delicate, with a soft sensation that evolves into greater structure and richness, finishing with light bitter nuances that provide depth and persistence.
Ideal with seafood, shellfish, fish-based dishes, and refined preparations that enhance its freshness and complexity.
