Description

Etna Bianco from Azienda Vivera is a Sicilian white wine made from Carricante grapes grown on the north-eastern slope of Etna, at around 600 meters above sea level. The vineyards are rooted in stony, volcanic soils, in a mountain environment marked by cool summers and pronounced diurnal temperature swings.

The grapes are hand-harvested and gently pressed under inert conditions. Fermentation takes place in stainless steel at controlled temperature, followed by aging on the fine lees, which helps develop balance, precision, and complexity.

In the glass it shows a straw-yellow color. The nose opens with citrus aromas and a distinct mineral streak, while the palate is fresh, juicy, and saline, with good length and a pleasant tension on the finish.

It pairs well with vegetable couscous, fried fish, carpaccio, meat rolls, grilled vegetables, and savory pies.
